Christmas Calendar 2012 Day 16 - Italian style panforte



I have another "sweet tooth" for the Italian panforte. I always buy one of these cakes, when I have been in Italy. You can also buy them in Denmark, but here they cost  a fortune, so when I found a recipe on panforte, I decided to test it out. And it taste great, so therefore I am sharing this recipe with you in this Christmas Calendar.

Italian style panforte: - 1 cake of 11 x 35 cm

  • 180 g mixed nuts (almonds, pine kernel, walnuts, pistachios) - roughly chopped
  • 100 g marzipan - cut into 1 cm piece
  • 50 g candied orange peel
  • 50 g sucat
  • 50 g (cake) flour 
  • ½ teaspoon cinnamon
  • 1/4 teaspoon all spice
  • 125 g honey
  • 125 g sugar
  • Icing sugar
  1. Heat the (conventional) oven to 175'C.
  2. Mix nuts, marzipan, orange peel, sucat into a mixing bowl.
  3. Add flour and the various spices into the bowl, mixing well.
  4. Add honey and sugar into a cooking pot, let it melt it together and cook it up to the boiling point.
  5. Pour the honey-sugar mass into the mixing bowl. Stir everything together. 
  6. Cover a cake form with baking paper. Press the cake mass into the cake form. Smooth the surface of the cake with a spoon, which has been dipped into water. The dough should not have a height over 1 cm.
  7. Bake the cake in the oven at 175'C for 35 minutes.
  8. Cool down the cake.
  9. Remove the baking paper from the cake and cover the surface with icing sugar.
